Moreishly European. Like trying to savour your last Pfeffernüsse between gloved fingertips whilst admiring a little girl and her mother singing Silent Night as snowflakes fall around you at the Bremen Christmas Markets. (No, really.)

Doc. Choc's Inspiration

A few months before I found the courage to start Kenyak, I booked the entire month of December off . I wanted to travel; visit Europe, drink copious amounts of hot chocolate in the snow, and let my mind wonder. I was going to go South to North through Eastern Europe up to Scandinavia - and see where all those festive market scenes in snow globes Grandma had collected came from.

It was a nice plan; or distraction really, from the gnawing of a particular feeling that it was time to put everything into Kenyak.

Eventually the penny dropped, and I moved jobs to Pigeon Whole Bakers so that I could start Kenyak. A few weeks in, a particular label caught my eye in the dry-store - Lebkuchengewüerz. German gingerbread spice.

If you stop and look around, you might just find your own snow-globe.

  • Lebkuchengewüerz is a rich German Gingerbread Spice Blend, it's most commonly used in festive treats like Lebkuchen and Pfeffernüsse. It has 9 ingredients, all individually roasted to perfection and then ground down together.

  • Caramelised White Chocolate, often called Gold Chocolate, is a type of chocolate that has had the milk powder and some of the sugar caramelised before being added to the chocolate. It gets this incredible rich and moreish flavour, a bit like dulce de leche, or a really good flan, or a bit like if you managed to make a pannacotta out of both of those things. (Doc.Choc strongly recommends it) It also has a little salt added, which if you ask us - is an absolute master stroke.

  • 38% Milk Chocolate Block. 70g Minimum. 100% Traceable.
