Belgrove Whisky
Uniquely sumptous; warming and comforting, like a proper hug. Lengthy finish.
Caramel
Fresh, clean and buttery. Something akin to the oldschool whey caramels of the 1980's.
Pineapple Sesame
Found deep in the archvies from when I was 20 something. Charred Pineapple Caramel alongside a textural Sesame Praline.
Passionfruit
Tastes like the perfect trip to the beach before the end of summer sets in. Bright, and just a little bitter.
Yuzushu
One of those things that just brings a smile to your face. Here you'll find it in a gorgeous ganache with equal parts fruity dark chocolate and nutty milk chocolate.

Contentious, I know - but this version has a mango jam and Sparkling reisling ganache inside. Move over peach.

The summers of my early 20’s in a Chocolate. Never Never Triple Juniper Gin and Orange Ganache. Infused with a little boquet of native australian herbs for depth.
Blacksnake Cherry Smash
Doc.Choc loves Mezcal, and Tequila; the funkier the better. So, a Cherry and Lime gel alongside an Agave Spirit Ganache from country NSW seemed fitting.
Hojicha
A chocolate that almost didn't happen, but one that I'm very glad did. A memory worth sitting in.
