The Pigeon Whole Bakers Gingerbread Chocolate Bar

Every now and then, a chocolate bar lands that feels a little bigger than the sum of its parts.

Our Gingerbread Chocolate Bar is one of those.

  • A few months before Kenyak began, I booked out the entire month of December to chase a Christmas daydream. I planned to travel from South to North through Eastern Europe — hot chocolates, snowflakes, and snow globes. It was going to be a proper break, or maybe a distraction from the bigger truth I was trying not to look at: that it was time to make this chocolate dream thing real.

    Eventually, the daydream cracked open into something better. I moved jobs and joined the team at Pigeon Whole Bakers. A few weeks in, I spotted a label in their dry store: Lebkuchengewüerz. German gingerbread spice. The rest is history (or at least, chocolate goodness.)

  • Back for round two after selling out in ten days last Christmas, the Pigeon Whole Gingerbread Bar brings together PWB’s superb housemade gingerbread and our moreish caramelised white chocolate. Think cookies and cream, but festive, grown-up, and proudly handmade in Tasmania.

    We like to think of it as moreishly European — like trying to savour your last Pfeffernüsse while listening to carols in the snow at the Bremen Christmas Markets. (No, really.)

    It’s sweet, spiced, and buttery. But it also carries that soft glow of memory. The kind of flavour that reminds people of something — even if they’re not quite sure what

Christmas Chocolate Gift Guide: Thoughtful Picks for Everyone

I think most people fall into the camp of knowing exactly what to get someone, or having an absolutely all consuming sense that we have no clue what to get someone.

I’m in the latter; which probably explains why I send my family a hyperlinked Christmas list every October. Either that or I’m sick of getting socks that don’t match my shoes.

Anyhoo, here’s a gift guide if - like me, you never quite know what to get someone!

After Dinner Treats

    • 9 very grown up chocolates, made in collaboration with Belgrove Distillery, perhaps the worlds most unique and sustainable Distillery.

  • We work by hand with Chocolate from Felchlin. They've been making it in Switzerland for over 100 years. It is truly exceptional stuff. Kosher & Halal Certified too.

    We choose to shell our Individual Chocolates in a 55% Dark and 38% Milk Chocolate respectively. With the odd touch of White or Gold Choc where the recipe calls for it

  • Our chocolates are designed to be instantly familiar yet a little bit unexpected. Like your best kept memories.

    This year you’ll find a mix of Fruit, Alcohol, and Classic (ish) Chocolates inside each box. Some standouts include

    Yuzushu - One of those things that just brings a smile to your face.

    Milo Cornflake Crunch - Remember when you were a little kid and you mixed your milo into your cornflakes? Crushed cornflakes with Milo & Caramalised White Chocolate.

  • Our Honeycomb is made with Tarkine Wilderness Honey - from the NW of Tasmania. It’s bathed in the cleanest air in the world.

    • Handmade Vanilla Marshmallow, Sugar Roasted Macadamias, Dried Cherries and Cranberries, and Shredded Coconut.

    • At 2am in the kitchen, with just enough streetlight beaming through the window to see if you’ve successfully found the box you hid in the back of that weird bottom drawer or if you’re about to bite into a tape-measure.

Things to Know

  • We prefer to spend our time making as many Tasty Treats as humanly possible, rather than tending to spreadsheets and half filled boxes.

    If you’re worried about missing out, we’d recommend heading to the check-out.
